Scale ice
Ice scales are the coldest form of ice. Formed at -6° to -12°Celsius, they are very dry containing less then 2% residual water. Scales look like fragments of glass, have an irregular shape and a thickness that can be adjusted from between 1 to 2 mm. Scale ice melt slowly, and is ideal for large display surfaces such as ice-beds.
Scale ice, rather cold and dry at the time it is formed, will naturally rise to somewhat milder temperatures after the usual storage period in the ice bin, and the moisture content will grow high enough so that it will be possible to use in direct contact with fish or other displayed foods, for the longest periods of refrigerations and moisture release.
This market it suitable for the large display surfaces of both hypermarkets and supermarkets.
